History of Tartuflanghe goes back in 1968, when founders, Domenica Bertolusso and Beppe Montaro started marketing fresh truffles from the Piedmont region. During that time, they also had a restaurant called Da Beppe, which was considered a landmark for all mushrooms and truffle lovers. Even the Michelin guide praised them. Tartuflanghe was founded in 1980, to exploit Beppe’s experience and creativity.

The first specialities with truffles were created in 1990, to give people a chance of tasting truffles, even if not in season. The first speciality was Pasta with truffles, which even recieved an award for the best new product on the market. Now, we can see many plenty of products with truffles, made by Tartuflanghe, like sauces, pastas, various snacks, appetizers and many more.

In the last years, Stefania and Paolo joined their parents business and inherited their experience and enthusiasm for creating culinary specialities.

Tartuflanghe is also a proud owner of »Eccellenza Artigiana« (Artisian Excellence title), awarded by the Piedmont region, for it’s 30- year experience in the culinary world.

This excellent product is a result of many researches. Because of the inovative technique, the truffles can be kept at a room temperature for months, withous changing their taste. The smell and taste of “noH2O” dehydrated truffles fully develops served on warm dishes, because it gives out that typical taste, that makes truffles so unique.

noH2O truffles should be added at the end, like fresh truffles. To get out the best of the truffle, crush it, sprinkle it over a warm dish and wait for 2-3 minutes for the truffle to moisten. That is how you will get the truffle to taste more intense.

Whole truffle stored in truffle juice makes it possible for us to taste truffles out of the season. Beppe’s 30 year experience comes forward when processing truffles.

TRUFFLE PERLAGE®

Truffle perlage is a very inovative product, made by Tartuflanghe. It seems like caviar, but it tastes like winter truffles. Truffle caviar is made from truffle juice, which is made from cooking fresh truffles. This tasty juice is turned into tiny pearls with a refined technique, called spherification. These pearls still have the taste of truffles but texture of caviar.

Usage advice: try it on crostini, ise it as a decoration for fresh cheese, ham and foie gras, fish carpaccio or fillet, various soups and vegetable creams, cheese fondues, potatoes with eggs, meat filletes and all dishes that go with truffles.

ANCHOVY PERLAGE®
